A chewy soft freshly “baked” cookie with an added protein boost cooked up in under 2 minutes in the microwave!

- Mix together all ingredients in a bowl.
- Grease a 4-5 inch ramekin with coconut oil.
- Place mixture into the ramekin and spread evenly with the back of teaspoon packing it down.
- Cook in the microwave on high for 1.5 – 2 minutes – less time for a softer cookie!
