Start with Trini Doubles (puffed-up flatbreads with curried chickpeas and chutney) or Sweetcorn Fritters, made with scotch bonnet peppers and Indian hot sauce. Then perhaps choose one of the One Pot meals - Ital Rundown (beans and veg in a coconut sauce) or the sweet potato and aubergine curry, both served with rice and roti.
