Ingredients

  • 1 cup finely chopped mushrooms
  • 200g brown rice
  • 2 spring onions, finely chopped
  • 1 teaspoon of turmeric
  • 1 teaspoon of curry powder
  • Vegetable oil
  • A small handful of coriander, finely chopped

Method

  • Set a large pan of water on high heat, and bring to the boil while you prepare the ingredients.
  • Add the rice to the pan, and halfway through it’s cooking time, set a large frying pan on medium heat with a glut of oil.
  • When the oil is hot, add the mushrooms and cook until softened (about 1 minute), then add the onion and spices and turn the heat to low. Stir to make sure the spices don’t burn.
  • Drain the rice and add it to the mushroom pan. Stir until the rice has taken on a yellow colour, stir in the coriander and serve.
