Preheat the oven to 200c.
- Cut the cauliflower from top to bottom in 1 inch thick slices, then lay the slices out on a baking tray lined with greaseproof paper.
- Peel the garlic cloves and place them among the cauliflower.
- Sprinkle the cauliflower with a pinch each of salt and pepper, and 2 pinches of mixed herbs, making sure that each piece of cauliflower gets some.
- Drizzle olive oil over each piece of cauliflower, then roast in the oven for 25 minutes.
- Serve and enjoy!
