Juni, rund um den Internationalen Tag der Ozeane und den Tag des veganen Fischbr\u00f6tchens, dazu ein, die pflanzliche Ern\u00e4hrung und kulinarische Alternativen zu Fisch zu entdecken. Daf\u00fcr h\u00e4lt sie unter anderem Rezepte und Tipps von Veganuary-Unterst\u00fctzerin und Ern\u00e4hrungsberaterin Carina Wohlleben bereit.<\/strong><\/p>\n\n\n\n<p>Pflanzliche Fischalternativen bestehen meist aus Erbsen, Ackerbohnen, Weizen, Soja, Karotten, Tomaten, Pilzen \u2013 oder aus Algen. Zukunfts-, Klima- und Lebensmittelforschende sehen in den Meerespflanzen nicht nur eine effektive Hilfe gegen den Klimawandel, sondern auch ein nachhaltiges Superfood, das die Ern\u00e4hrung einer wachsenden Weltbev\u00f6lkerung sicherstellen kann \u2013 und dabei unsere Ozeane und deren Bewohner sch\u00fctzt. Und zeigt damit, wie Nori-Algen den Geschmack des Meeres auf diese frischen Karottenlachs-Br\u00f6tchen zaubern.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\"><strong>Karottenlachs-Br\u00f6tchen mit Nori-Algen<\/strong><\/h2>\n\n\n\n<p><strong>Zutaten:<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>3 gro\u00dfe Karotten<\/li>\n\n\n\n<li>2 EL Lein\u00f6l<\/li>\n\n\n\n<li>1 EL Sojasauce<\/li>\n\n\n\n<li>\u00bd TL Rauchsalz<\/li>\n\n\n\n<li>1 EL Nori-Flocken<\/li>\n\n\n\n<li>3 EL vegane Mayonnaise<\/li>\n\n\n\n<li>3 EL Soja-Skyr<\/li>\n\n\n\n<li>2 TL veganer Tafelmeerrettich<\/li>\n\n\n\n<li>3 Gew\u00fcrzgurken<\/li>\n\n\n\n<li>1 EL Dill, gehackt<\/li>\n\n\n\n<li>4 Vollkornbr\u00f6tchen<\/li>\n\n\n\n<li>8 Bl\u00e4tter Romanasalat<\/li>\n<\/ul>\n\n\n\n<p><strong>Zubereitung:<\/strong><\/p>\n\n\n\n<p>1. Die Karotten sch\u00e4len und mit einem Sparsch\u00e4ler in feine Streifen schneiden. Anschlie\u00dfend f\u00fcr 5 Minuten in einem Dampfgarer garen oder kurz blanchieren.<\/p>\n\n\n\n<p>2. Aus Lein\u00f6l, Sojasauce, Rauchsalz und Nori-Flocken eine Marinade anr\u00fchren und mit den Karottenstreifen in einer Sch\u00fcssel vermischen. F\u00fcr mindestens 1 Stunde ziehen lassen.<\/p>\n\n\n\n<p>3. Die vegane Mayonnaise zusammen mit dem Soja-Skyr und dem Tafelmeerrettich in eine Sch\u00fcssel geben.<\/p>\n\n\n\n<p>4. Die Gew\u00fcrzgurken in feine W\u00fcrfel schneiden und zusammen mit dem gehackten Dill, der Mayonnaise, dem Soja-Skyr und dem Tafelmeerrettich verr\u00fchren.<\/p>\n\n\n\n<p>5. Nun die Br\u00f6tchen so weit aufschneiden, dass die beiden H\u00e4lften noch verbunden bleiben. Dann auf jedes Br\u00f6tchen zwei Bl\u00e4tter Romanasalat legen und mit einem geh\u00e4uften EL der Meerrettich-Remoulade bestreichen.
