Vegan  cheatin' chicken sandwich

There are some great mock meats around, and the sliced ones are perfect for sandwiches. I’d recommend these for transitioning vegans, and they’re so useful for lunch on the run. You can store a packet of these chicken slices in the fridge at work, or take the sandwiches with you. Sliced mock meats are great for kids as well, so one to remember when making up a school lunch box.

  1. Cheatin’ Chickens Slices – 2/3 (or any sliced mocked meat of your choice – VBites do a whole range, for example)
  2. 2 slices of bread
  3. Vegan spread (like Pure or Vitalite) or a squeeze of vegan mayo
  4. Crunchy salad mix ((chopped cucumber, grated carrot, chopped red pepper, finely chopped red onion))
