Vegan Options at Lexi’s Healthy Eatery

Breakfast:

  • Sexy Spinach Scramble
    Tofu or egg scrambled with spinach, kale & fresh parsley, with slow roasted tomato, avocado, savoury granola & rye toast.
  • Farmers Breakfast Bowl
    Tofu scramble or a poached egg, grilled mushrooms, roasted potatoes, grilled cherry tomatoes and fresh avocado with a vegan hollandaise & sumac.
  • Pink Dragon Bowl
    Pink dragonfruit and mango with non-dairy milk served with grapefruit, strawberries, coconut caramel, granola & hemp seeds.

Light Meals:

  • Buffalo Cauliflower
    Buffalo-style cauliflower with crispy chickpeas, cherry tomatoes, mixed greens and chipotle mayo.
  • Pulled Mushroom
    Pulled oyster mushrooms with a smokey beet sauce, cashew cream, African-style spinach, a touch of chilli & red cabbage.
  • Nachos
    Served with pineapple salsa & guacamole.

The Main Event:

  • Veggie Korma
    Mixed seasonal veggies & cashew nuts cooked in a tomato, coconut cream with Indian curry spices & brown basmati rice.
  • Activated Charcoal Burger
    Sweet potato & chickpea burger charged with activated charcoal, carrot hummus, chipotle mayo, raw slaw, sliced tomato & mixed greens.
  • The BIG Beyond
    Beyond Meat patty (100% plant based) topped with our smokey pulled mushrooms with secret sauce, tomato & raw slaw.

Sweet Treats:

  • Life By Chocolate
    Dark chocolate ganache-style ice cream, gluten-free shortbread biscuit crumb, frozen berries and a coconut caramel.
  • Summer Pavlova
    Vegan meringue with seasonal fruit, coconut cream & a rose syrup
  • Warm Salted Choc Brownie
    Dark chocolate brownie served with coconut cream, strawberries & walnuts.
