Overnight oats are the easiest healthy plant-based breakfast of all time. You can meal prep several jars at once in just a few minutes and keep them in the fridge for up to five days. There are countless varieties of vegan overnight oats, but this is our favorite! These cherries and cream overnight oats take just a tiny bit more effort but make this healthy and filling morning meal even more fun. It’s bursting with luscious cherries and is so creamy you’ll wonder if this should “technically” be classified as dessert.

Ingredients

Cherry Compote:

  • 1/2 cup frozen cherries
  • 1 tsp chia seeds
  • 1 tsp maple syrup

Oats:

  • 1 cup rolled oats
  • 1 tsp chia seeds
  • 1 cup soy milk
  • 1/2 teaspoon vanilla extract
  • 1 tablespoon maple syrup

Optional Toppings:

  • Coconut whipped cream
  • Almond slivers
  • A fresh cherry

There are countless varieties of vegan overnight oats, but this is our favorite! These cherries and cream overnight oats take just a tiny bit more effort but make this healthy and filling morning meal even more fun. It’s bursting with luscious cherries and is so creamy you’ll wonder if this should “technically” be classified as dessert.

Method

Method:

  1. To make the cherry compote: In a small saucepan over low heat, add the frozen cherries, chia seeds, and maple syrup. Using a potato masher, mix and mash as the cherries as they heat and soften and burst, for about 5 minutes. Turn off heat and allow to thicken while you move on to step 2 and prep the oats.
  2. In a 16-oz glass mason jar with a lid, add the dry rolled oats, chia seeds, soy milk, vanilla extract, and maple syrup. Close the lid tightly and shake to mix. Add the cherry compote on top and either mix it in or leave the compote on top (your choice). Close the lid.
  3. Refrigerate for 3+ hours, or overnight. Remove from fridge, add any desired optional toppings if desired, and enjoy chilled!
