Aunque su origen se sit\u00faa en los derechos animales, lo cierto es que existen muchos beneficios, tanto para el planeta como para la propia salud al eliminar la carne y productos de origen animal de la dieta.&nbsp;<\/p>\n\n\n\n<p>La nutricionista <a href=\"https:\/\/www.instagram.com\/veganadelavidareal\/\" target=\"_blank\" rel=\"noreferrer noopener\">Paula Lobovsky<\/a>, presidenta de la Asociaci\u00f3n Chilena de Nutricionistas Vegetarianos, Achinuv, detalla que \u201creducir y eliminar todo tipo de carnes, incluyendo no solo la carne roja, sino tambi\u00e9n las blancas y pescados, puede reducir el riesgo de enfermedades card\u00edacas, diabetes tipo 2, hipertensi\u00f3n arterial y colesterol alto\u201d.\u00a0<\/p>\n\n\n\n<p>La especialista explica que todos los productos de origen animal tienen en alg\u00fan porcentaje colesterol, que es conocido por aumentar el riesgo de accidentes cerebrovasculares, diabetes, infartos y aumentar la presi\u00f3n arterial. \u201cSumado a eso, en 2015, la Organizaci\u00f3n Mundial de la Salud, declar\u00f3 que carnes procesadas como jam\u00f3n, hamburguesas y vienesas, aumentan el riesgo de c\u00e1ncer colorrectal, si se consumen m\u00e1s de tres veces por semana, por lo que se encuentra en el grupo cancer\u00edgeno 1. Por ende, reducir y eliminar su consumo, siempre traer\u00e1 beneficios\u201d, agrega.&nbsp;<\/p>\n\n\n\n<p>Adem\u00e1s, al evitar la carne, tambi\u00e9n se reduce la exposici\u00f3n a antibi\u00f3ticos y hormonas utilizados en la cr\u00eda de animales, explica la presidenta de Achinuv. Por otro lado, las prote\u00ednas vegetales tienden a proteger la funci\u00f3n de los ri\u00f1ones y reducen el riesgo de c\u00e1ncer colorrectal, gracias a la fibra y antioxidantes que contiene.&nbsp;<\/p>\n\n\n\n<p>Adem\u00e1s, quienes dejan de consumir carne tambi\u00e9n notan cambios significativos en poco tiempo. Seg\u00fan la <a href=\"https:\/\/veganuary.com\/es\/el-80-de-los-participantes-de-veganuary-comen-50-o-menos-carne-lacteos-y-huevos-seis-meses-despues-de-participar\/\" target=\"_blank\" rel=\"noreferrer noopener\">Encuesta Oficial de Veganuary 2023<\/a>, que se realiza a los participantes de la campa\u00f1a luego de seis meses de haber probado el veganismo por un mes, un 62% de quienes mantuvieron una dieta vegana han visto mejoras en su salud, entre ellas: aumento de energ\u00eda (58%), mejor estado de \u00e1nimo (57%), mejoras en la piel (51%) y cambio deseado en el peso corporal (43%).&nbsp;<\/p>\n\n\n\n<h2 class=\"wp-block-heading\"><strong>El mismo sabor, pero con menor impacto<\/strong>&nbsp;<\/h2>\n\n\n\n<p>Para la producci\u00f3n de una hamburguesa de carne se requieren 2.400 litros de agua. Si esto lo comparamos con otra fuente de prote\u00ednas como las legumbres, podemos se\u00f1alar que un kilo de lentejas solo necesita 50 litros de agua para su producci\u00f3n. La comparaci\u00f3n de la huella h\u00eddrica de los productos de origen animal versus los de origen vegetal es enorme. Ah\u00ed radica la importancia de iniciativas como el D\u00eda Mundial sin Carne.&nbsp;<\/p>\n\n\n\n<p>Actualmente existen muchos sustitutos vegetales disponibles en el mercado que, en textura y sabor, imitan a los productos c\u00e1rnicos, pero con un impacto medioambiental y en los animales mucho menor; o bien productos vegetales que a trav\u00e9s de diferentes preparaciones o procesos pueden imitar a la carne, tales como el seit\u00e1n, el tofu o incluso las legumbres, en preparaciones como hamburguesas.&nbsp;<\/p>\n\n\n\n<p>Mauricio Serrano, director de Veganuary Latinoam\u00e9rica explica que \u201cla verdad es que muchas de las personas que llevan o quieren llevar un estilo de vida vegano no lo hacen porque no les gusta la carne, lo hacen porque no quieren generar impacto negativo en los animales, el medioambiente o su propia salud\u201d. Y respecto a las opciones que ofrece actualmente mercado, agrega que, \u201csi a una persona le gusta la carne, pero no le gusta el sufrimiento animal, tiene la opci\u00f3n de comer productos similares, pero que no sean de origen animal, como hamburguesas, salchichas u otros productos, que cada vez son m\u00e1s parecidos a los que consum\u00edas anteriormente. Entonces, qu\u00e9 mejor que seguir comiendo lo mismo, pero sin afectar a otros\u201d, declar\u00f3.&nbsp;<\/p>\n\n\n\n<p>Romina Moncada, creadora de contenido conocida como <a href=\"https:\/\/www.instagram.com\/vegana_con_castanas\/\" target=\"_blank\" rel=\"noreferrer noopener\">Vegana con Casta\u00f1as<\/a> en Instagram coincide y agrega que \u201cmuchos de quienes dejamos de consumir animales lo hicimos por una convicci\u00f3n que se mueve mucho desde la empat\u00eda o el deseo de justicia, no necesariamente porque no nos gustara comer animales, sino porque consideramos que no era lo correcto\u201d.
