Se trata&nbsp;del&nbsp;tempeh,&nbsp;que ha ganado&nbsp;popularidad&nbsp;en el \u00faltimo tiempo, debido a su alto componente nutricional, que incluso la posiciona como un superalimento.&nbsp;<\/p>\n\n\n\n<p>El&nbsp;tempeh&nbsp;es un alimento originario de Indonesia elaborado a partir de la fermentaci\u00f3n de porotos de soya. Es decir, es m\u00e1s f\u00e1cil de digerir y se puede absorber mejor los nutrientes\u201d.&nbsp;<\/p>\n\n\n\n<p>Dejar la carne puede ser un desaf\u00edo si no se conocen opciones que realmente aporten valor nutricional y sabor.&nbsp;Aunque no tan popular como el tofu o el seit\u00e1n, el&nbsp;tempeh&nbsp;surge como una de las mejores alternativas, ya que contiene todos los amino\u00e1cidos esenciales, es bajo en grasas saturadas y no tiene colesterol. Esto contribuye a reducir el estr\u00e9s oxidativo en el cuerpo, que est\u00e1 relacionado con enfermedades cr\u00f3nicas como el c\u00e1ncer\u201d, explica Casta\u00f1eda.&nbsp;<\/p>\n\n\n\n<h2 class=\"wp-block-heading\"><strong>\u00bfC\u00f3mo cocinarlo?<\/strong>\u00a0<\/h2>\n\n\n\n<p>Hoy en d\u00eda, el&nbsp;tempeh&nbsp;tambi\u00e9n se prepara&nbsp;de otras legumbres, comenta Melina Villafa\u00f1e, y agrega que \u201ctiene una textura firme, tipo \u201cbloque\u201d, y un sabor m\u00e1s intenso que el tofu. Es s\u00faper vers\u00e1til para cocinar\u201d.&nbsp;Esto lo hace perfecto para platos que tradicionalmente llevan carne, como guisos, ensaladas, salteados y s\u00e1ndwiches.&nbsp;<\/p>\n\n\n\n<p>Patricia Casta\u00f1eda comenta que \u201cpuede prepararse en forma de&nbsp;nuggets, milanesas o hamburguesas, adapt\u00e1ndose f\u00e1cilmente a distintas recetas. Se puede empanizar con harina o con alternativas como cereales (avena) o&nbsp;seudocereales&nbsp;(kiwicha&nbsp;o quinua) para lograr una textura m\u00e1s crujiente y un aspecto m\u00e1s atractivo\u201d.&nbsp;<\/p>\n\n\n\n<p>La clave es marinarlo y dorarlo bien, comenta Melina. \u201cPuedes cortarlo en laminas o cubitos, marinar con salsa de soja, ajo, piment\u00f3n, lim\u00f3n, y despu\u00e9s llevarlo a la sart\u00e9n o al horno hasta que quede dorado y crocante por fuera. As\u00ed logra una textura y sabor mucho m\u00e1s \u00b4tipo carne\u00b4\u201d.&nbsp;<\/p>\n\n\n\n<p>Si bien el&nbsp;tempeh&nbsp;est\u00e1 ganado protagonismo, si las personas buscan reducir su consumo de carne y reemplazarla por fuentes vegetales, otros grandes sustitutos son el seit\u00e1n (elaborado a partir de gluten, la prote\u00edna del trigo), la soya texturizada y el tofu.&nbsp;\u201cTodos ellos son muy vers\u00e1tiles y pueden utilizarse para reemplazar la carne en casi cualquier preparaci\u00f3n. Tambi\u00e9n existen otras&nbsp;\u00b4carnes vegetales\u00b4&nbsp;que aportan prote\u00edna, como la&nbsp;yuba&nbsp;(piel de la soya) y las hamburguesas vegetales elaboradas con legumbres\u201d, agrega Patricia.&nbsp;<\/p>\n\n\n\n<p>\u201cLas setas y los hongos tambi\u00e9n pueden ayudar a reemplazar la carne, especialmente por su textura y sabor umami.
