Certes, la viande est riche en prot\u00e9ines, mais \u00e7a ne veut pas dire pour autant qu\u2019on ne trouve pas suffisamment de prot\u00e9ines dans d\u2019autres aliments. Bien au contraire\u2009! Les vegans prennent simplement exemple sur les \u00e9l\u00e9phants, les bisons et les rhinoc\u00e9ros, et vont directement chercher leurs prot\u00e9ines \u00e0 la source : dans les v\u00e9g\u00e9taux.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">LES SOURCES DE PROT\u00c9INES V\u00c9G\u00c9TALES<\/h2>\n\n\n\n<p><br>Les sources de prot\u00e9ines v\u00e9g\u00e9tales ne manquent pas.<\/p>\n\n\n\n<p>Bien que les prot\u00e9ines soient des macronutriments essentiels, la grande majorit\u00e9 de la population fran\u00e7aise n\u2019a pas \u00e0 s\u2019inqui\u00e9ter des risques de carence. Pour autant, il est toujours utile de savoir quels aliments d\u2019origine v\u00e9g\u00e9tale sont riches en prot\u00e9ines et d\u2019essayer d\u2019en inclure dans ses repas avec un peu de vari\u00e9t\u00e9.<\/p>\n\n\n\n<p>Les prot\u00e9ines se composent de 20 types d\u2019acides amin\u00e9s dont la majorit\u00e9 peut \u00eatre synth\u00e9tis\u00e9e directement par notre organisme. Il existe 9 acides amin\u00e9s que notre corps ne produit pas lui-m\u00eame et qui doivent \u00eatre obtenus par l\u2019alimentation : on parle dans ce cas d\u2019acides amin\u00e9s essentiels.<\/p>\n\n\n\n<p>Si les aliments d\u2019origine v\u00e9g\u00e9tale contiennent la plupart de ces acides amin\u00e9s essentiels, il en existe deux en particulier que certains peuvent contenir en plus ou moins grande quantit\u00e9 : la lysine et la m\u00e9thionine. De mani\u00e8re g\u00e9n\u00e9rale, les c\u00e9r\u00e9ales, telles que le riz et le bl\u00e9, sont plus pauvres en lysine (mais elles sont riches en m\u00e9thionine). \u00c0 l\u2019inverse, les l\u00e9gumineuses, comme les haricots et les pois, sont plus pauvres en m\u00e9thionine (mais riches en lysine). Avec une alimentation v\u00e9g\u00e9tale vari\u00e9e et \u00e9quilibr\u00e9e, il n\u2019est toutefois pas bien compliqu\u00e9 de couvrir ses besoins pour l\u2019ensemble des acides amin\u00e9s essentiels.<\/p>\n\n\n\n<p><strong>Quelques aliments cl\u00e9s riches en prot\u00e9ines :<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>Les l\u00e9gumineuses (haricots, pois, lentilles\u2026) et leurs d\u00e9riv\u00e9s (tofu, tempeh, prot\u00e9ines de soja textur\u00e9es\u2026)<\/li><li>Les c\u00e9r\u00e9ales (riz brun, p\u00e2tes et pain complets, quinoa, boulgour\u2026)<\/li><li>Les ol\u00e9agineux (noix du Br\u00e9sil, cacahu\u00e8tes, noix de cajou, amandes, pistaches\u2026)<\/li><\/ul>\n\n\n\n<p>Vous vous inqui\u00e9tez encore de manquer de prot\u00e9ines\u2009? Rassurez-vous\u2009! On en trouve dans tous les aliments (\u00e0 l\u2019exception des huiles et du sucre). En les supprimant de son alimentation, on peut par la m\u00eame occasion consid\u00e9rablement r\u00e9duire sa consommation d\u2019acides gras (notamment satur\u00e9s), ce qui peut s\u2019av\u00e9rer b\u00e9n\u00e9fique pour la sant\u00e9, surtout pour les personnes ayant un taux de <a href=\"https:\/\/veganuary.com\/fr\/cholesterol\/\" target=\"_blank\" rel=\"noreferrer noopener\">cholest\u00e9rol<\/a> \u00e9lev\u00e9 [1]. Il convient toutefois de s\u2019assurer de consommer suffisamment de graisses v\u00e9g\u00e9tales, essentielles pour la sant\u00e9.
