Ruth lost 70 lbs by transforming her diet and eating a healthy whole foods plant based diet.
Ruth had always struggled with her weight since childhood. She couldn’t to keep up with the healthier and fit kids at school, and as a result she found it difficult to be accepted amongst her peer group.
In 2009, in her late twenties she visited her doctor after experiencing nausea, muscle aches, dizziness and extreme exhaustion for several weeks. She was shocked to find out she weighed 290 lbs and was diagnosed with high blood pressure, and diabetes. All of her food choices she had been making for 29 years were shortening her life expectancy and she knew she had to make immediate changes. She didn’t want to be dependent for the rest of her life on medication.
During her weight loss journey and researching healthy eating, she watched films like Food Inc. and Forks Over Knives. Eighteen months into her weight loss journey she had reached a plateau and was not able to lose weight as consistently as she had been. These documentaries lead her to realise she need to adopt a vegan diet if she was to get to a healthy weight. She purchased books including Plant-Based Nutrition, Engine 2 Diet, Happy Herbivore Cookbooks, and The China Study.
Overnight she went fully plant-based and lost 70 lbs (155 lb in total during her dieting) over a six month period and reversed and eliminated all of her medical issues. She stopped feeling exhausted all the time, and indeed struggled with too much energy!
