A rich, smooth blue-style ‘cheese’, with that high end edge that we so identify with blue cheese. Again, this one’s addictive, and like the mature white, is wonderful as an after dinner cheese with crackers, in a sandwich, with a freshly cut salad, or served with fresh fruit. Also super-delicious on toast, or mixed with vegan cream as part of a pasta dish with slivers of precooked mushrooms and garlic.
