Foi desenvolvido com a parceria entre o Instituto de Ci\u00eancias Biol\u00f3gicas (IBC) da Universidade Federal de Minas Gerais (UFMG) e do Centro Federal de Educa\u00e7\u00e3o Tecnol\u00f3gica (CEFET) com financiamento do The Good Food Institute (GFI). Nosso prot\u00f3tipo usa c\u00e9lulas-tronco do tecido muscular da ave como base e, a partir delas, criamos um peda\u00e7o de carne de 1,5 cm cresce em duas semanas.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Voc\u00ea pode nos explicar detalhadamente o que \u00e9 a carne cultivada?<\/h2>\n\n\n\n<p><a href=\"https:\/\/veganuary.com\/pt-br\/o-que-e-carne-cultivada-2\/\">A carne cultivada<\/a> \u00e9 uma carne para consumo humano, produzida a partir do cultivo de c\u00e9lulas animais em laborat\u00f3rio. Essa \u00e9 uma nova frente tecnol\u00f3gica utiliza t\u00e9cnicas de reprodu\u00e7\u00e3o da engenharia de tecidos, combinando materiais e c\u00e9lulas, para obten\u00e7\u00e3o de carne id\u00eantica a carne convencional. Ou seja, \u00e9 simplesmente carne.<\/p>\n\n\n\n<p>O processo de produ\u00e7\u00e3o de carne cultivada envolve a extra\u00e7\u00e3o de c\u00e9lulas de um animal, por exemplo c\u00e9lulas troncos a partir de uma bi\u00f3psia, seguido pela expans\u00e3o do n\u00famero de c\u00e9lulas em ambiente controlado (biorreator) contendo nutrientes adequados (meio de cultura), subsequente, a matura\u00e7\u00e3o das c\u00e9lulas para produ\u00e7\u00e3o de m\u00fasculo e gordura em uma estrutura tridimensional conhecida como scaffold.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Ouve-se pouco falar de carne cultivada de frango. O prot\u00f3tipo que voc\u00ea criou \u00e9 algo in\u00e9dito no mundo ou apenas um assunto menos explorado?<\/h2>\n\n\n\n<p>O nosso prot\u00f3tipo n\u00e3o foi o primeiro. Em 2020 a empresa Eat Just j\u00e1 havia recebido aprova\u00e7\u00e3o regulat\u00f3ria para vender seu produto de frango cultivado em Singapura e esse produto est\u00e1 dispon\u00edvel para degusta\u00e7\u00e3o em um restaurante de Singapura atualmente. No final de 2022 a empresa UPSIDE FOODS passou pela primeira etapa de aprova\u00e7\u00e3o do FDA para comercializa\u00e7\u00e3o do seu produto de frango cultivado nos EUA e na semana passada a empresa SUPER MEAT tamb\u00e9m conseguiu essa aprova\u00e7\u00e3o com o FDA, tamb\u00e9m para um frango cultivado. <\/p>\n\n\n\n<p>Nos dois casos ainda n\u00e3o \u00e9 uma autoriza\u00e7\u00e3o para venda do produto, mas \u00e9 um passo importante nesse sentido. Conduto o frango cultivado dessas empresas \u00e9 o que chamamos na \u00e1rea de carne desestruturada, uma esp\u00e9cie de carne mo\u00edda. Na nossa pesquisa conseguimos produzir um peda\u00e7o de carne estruturado, i.e, um corte de carne de fato, mas ainda em escala laboratorial.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Como voc\u00ea chegou a se interessar a criar um prot\u00f3tipo de carne de frango cultivada?<\/h2>\n\n\n\n<p>Minhas pesquisas na \u00e1rea de engenharia de tecidos t\u00eam mais de 10 anos. Em 2016 fundei a Startup Biomimetic Solutions, uma spin off acad\u00eamica do CEFET MG. Essa empresa desenvolvia inicialmente de tecidos 3D para testes e novos f\u00e1rmacos e medicamentos. Com a empresa tivemos a oportunidade de participar de um programa de acelera\u00e7\u00e3o de Biotecnologia em Londres (Rebelbio) em 2018 e l\u00e1 ouvimos pela primeira vez a tecnologia de carne cultivada e a Biomimetic entendeu que poderia trazer solu\u00e7\u00f5es para essa \u00e1rea. Foi nesse ponto que direcionei minhas pesquisas para desenvolvimento de carne cultivada. <\/p>\n\n\n\n<p>Infelizmente a empresa fechou, mas continuei as pesquisas na Universidade sendo pioneira no Brasil com essa linha de pesquisas. Em 2021 conseguimos financiamento atrav\u00e9s da ONG internacional <a href=\"https:\/\/gfi.org\/\">The Good Food Institute (GFI)<\/a>, que incentiva a inova\u00e7\u00e3o do setor de prote\u00ednas alternativas, com valor investido ultrapassa R$ 1 milh\u00e3o. No entanto para alcan\u00e7ar o grande p\u00fablico e se tornar comum a tecnologia precisa ganhar escala e ser regulamentado para consumo. Os primeiros passos j\u00e1 foram dados. As empresas mais avan\u00e7adas j\u00e1 possuem f\u00e1bricas com capacidade produtiva e as primeiras regulamenta\u00e7\u00f5es j\u00e1 est\u00e3o sendo conclu\u00eddas.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">como \u00e9 o gosto desse tipo de carne, \u00e9 realmente parecido com o frango animal?<\/h2>\n\n\n\n<p>Sim, \u00e9 o mesmo gosto. Pois se trata de frango e n\u00e3o um produto que imita frango. A diferen\u00e7a \u00e9 que n\u00e3o pressa matar o animal para sua produ\u00e7\u00e3o.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Quais as vantagens em se consumir carne cultivada em rela\u00e7\u00e3o ao consumo da carne animal?<\/h2>\n\n\n\n<p>A tecnologia elimina a necessidade da cria\u00e7\u00e3o de animais para obten\u00e7\u00e3o de carne, trazendo diversos benef\u00edcios para o setor de sa\u00fade e meio ambiente. Atualmente estima-se que 30% da superf\u00edcie terrestre \u00e9 utilizada para a produ\u00e7\u00e3o agropecu\u00e1ria, al\u00e9m disso 70% da \u00e1gua doce e 20% da energia consumidas em todo mundo est\u00e3o diretas ou indiretamente relacionados a produ\u00e7\u00e3o de alimentos, dos quais uma propor\u00e7\u00e3o consider\u00e1vel \u00e9 utilizada para a produ\u00e7\u00e3o de carne. <\/p>\n\n\n\n<p>Levando em considera\u00e7\u00e3o a taxa de crescimento da popula\u00e7\u00e3o a estimativa \u00e9 de que o consumo de carne no mundo deve aumentar 70% at\u00e9 2050 e, segundo os cientistas, essa tend\u00eancia \u00e9 uma das causas das mudan\u00e7as clim\u00e1ticas. Nesse sentido essa tecnologia \u00e9 alternativa que deve ter impacto positivo no meio ambiente al\u00e9m de trazer solu\u00e7\u00e3o par alimenta\u00e7\u00e3o da popula\u00e7\u00e3o mundial.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">A carne animal tem quest\u00f5es de sa\u00fade como gripes, horm\u00f4nios, de sa\u00fade em geral. Como ficam esses riscos na carne cultivada?<\/h2>\n\n\n\n<p>O processo de obten\u00e7\u00e3o da carne cultivada ser\u00e1 muito mais controlado do que o da produ\u00e7\u00e3o de carne convencional, e os riscos de contamina\u00e7\u00e3o ser\u00e3o minimizados em compara\u00e7\u00e3o com os m\u00e9todos tradicionais, tornando o processo extremamente seguro. Como o processo \u00e9 altamente controlado problemas como gripes j\u00e1 n\u00e3o ocorrer\u00e3o, uma vez que para iniciar o processo de coleta a sa\u00fade do animal que fornece a amostra \u00e9 analisada.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Quais s\u00e3o os pr\u00f3ximos passos para que o seu prot\u00f3tipo de carne de frango siga se desenvolvendo e possa um dia chegar ao mercado?<\/h2>\n\n\n\n<p>Por enquanto, tudo \u00e9 feito em escala laboratorial. O pr\u00f3ximo passo da pesquisa \u00e9 reproduzir a t\u00e9cnica em escalas maiores e testar as condi\u00e7\u00f5es de produ\u00e7\u00e3o em
