I like experimenting and felt like some French toast one morning. I had some cannellini (navy) bean brine (aquafaba/AF) in the fridge and wondered if I could use that... It worked perfectly and my non-vegan husband demolished his plate in seconds!
This is intended to be basic cream cheese. It would also work well in a cheesecake. However, you could add other flavourings such as herbs or garlic. Grated lemon rind is a more unusual addition, and you could also toast some slivered almonds and roll the cheese in them.
