Orange Goji Smoothie
This orange and goji smoothie is really delicious; it is fresh, zingy and so refreshing. Orange and goji are rich sources of anti-oxidants and so this recipe is great for the immune-system. (What a great way to fend off the cold and flu!).

Courgette and Carrot Spaghetti with Red Pepper and Tomato Sauce
This is a great recipe which can be adapted for other vegetables too. I also use the cheese and sauce to make a raw lasagne with long strips of courgettes in layers. I love using my Lurch Spiraliser for this recipe but if you don’t have one you can use a swivel peeler instead.

Waldorf Salad
This is such a simple salad – rich and creamy and perfect for summer salad days. I also find this is a big hit with children too. The combination of sweet apples and grapes with a nut dressing and crunchy celery plus plenty of greens makes this a hearty filling option.

Lemon Sesame Seed Protein Balls
Energy balls are a fantastic way to get a quick hit of energy, whether it be to get through a meeting at work, keep you going in between classes or to see you through that challenging 1am – 2am phase of a Netflix marathon when you’re just so close to the end of the series, but your energy levels are dropping. The pistachio and seeds add texture and depth to the recipe and the very subtle zest from the lemon brings it all together.
I added Pulsin’ Organic Sunflower Protein Powder to these energy balls to give them a good ol’ protein boost. The wonderful thing about this protein powder is that it is vegan, soya free, non-GMO, gluten free AND has 45% protein – meaning a little goes a long way.

Raw Chocolate, Banana, and Almond Butter Recovery Balls
Thanks to Lauren of Powered By Peanut Butter for contributing this recipe!
These nutty protein recovery balls are based on the principle that after your workout or run your body will be wanting lots of nutrition and protein to let it replace all the energy it has burnt.

Pomegranate and Thyme Mocktail
Although it’s not quite as exciting as a Sidecar this fragrant ‘Pomegranate & Thyme’ cocktail alternative has enough layers of flavour to feel like a grown-up drink – crucially separating from it juice counterparts. Served in a vintage cocktail glass and adorned with a sprig of thyme, a few pomegranate seeds and a satsuma peel twist, I can honestly ‘hand-on-my-heart’ say I didn’t miss the booze.

Raw Spiced Apple and Date Pie
This pie is completely raw and brilliantly healthy. It is also easy to get together and only takes some intermediate blender skills and a little spreading to create. No ovens or pastry-making required. It has all the glorious flavours of traditional apple pie, just in a different, more wholesome wrapping. There is more nutritional value tucked away in a small slice of this apple pie than in most main course plates.

Avocado, Watercress and Dill Summer Rolls with Orange and Soy Dipping Sauce
Rice wrappers provide an excellent – and entirely wheat free – vehicle by which to get fresh salady ingredients from plate to mouth without the aid of cutlery. Genius. This version works well as a delicate starter leaving space for a more hearty meal or as part of a platter of nibbles before an evening out providing satisfying flavour without being too filling.

One of these a day will certainly keep the doctor away as it has been specifically concocted on the ‘food as medicine’ principle. We think you’ll really enjoy this smoothie as a means to feeling the benefit of Cordyceps Powder.

Green Power Smoothie
I have always been a fan of smoothies.
My passion for smoothie making began when I was 16 years old, training 3 hours a day and representing my country in karate, whilst planning the opening of my own karate school and trying to pass my final school year (yikes!).
I lost a whole lot of weight whilst my body fought to keep up with the demands of my lifestyle.
-
Chia Pudding
Chia is an incredibly nutritious seed and is probably going to make its way into most of my recipes!
This tiny seed certainly packs a punch. And even better, it is usually organic and sustainable!
I call this a pudding, but feel free to eat for breakfast, snack or after dinner treat.
-
Cashew Mayonnaise
No one will ever know that this “mayo” is super healthy...unless you tell them.
-
Quick Crumbly Cheese
Do you like parmesan? Are you fond of sprinkling crumbly cheese on your salads? Are you looking for a quick dairy-free salad dressing or dip? This recipe provides all of these things.
If you make it as per the recipe you'll have crumbly cheese. And if you add water you'll have a dip or a salad dressing, depending upon how much water you add.
The nutritional yeast gives you a delicious cheesy taste...without the gluten.
-
Creamy Nut Milks
Milk without the dairy! Nut milks are very filling and taste fantastic.
I use them on my versions of oatmeal and other cereals, in smoothies and in warming drinks like real hot chocolate, “mocha” and other milky drinks.
You can make your milk as plain or as sweet as you like, and as creamy or as “light” as you like with less or more water.
-
Palak (Curried Spinach)
This is so easy!
It goes well with a simple “rice” and a curry sauce. You can also eat it over a salad or use it as a thick dip for sprouted bread/crackers or veggies.
To be honest though, it could easily be a main course on its own – it’s so delicious and filling.
