- Set a large pan of water on high heat, and bring to the boil while you prepare the ingredients.
- Add the rice to the pan, and halfway through it’s cooking time, set a large frying pan on medium heat with a glut of oil.
- When the oil is hot, add the mushrooms and cook until softened (about 1 minute), then add the onion and spices and turn the heat to low. Stir to make sure the spices don’t burn.
- Drain the rice and add it to the mushroom pan. Stir until the rice has taken on a yellow colour, stir in the coriander and serve.
