Warm a pan over a high heat and add the onion, garlic and spices. Stir and cook for 2-3 minutes, until onions begin to soften.
Reduce heat to medium. Add the maple syrup, balsamic vinegar, mustard, thyme. Stir and cook for two minutes. Then add the beans and tomatoes and cook for another 2-3 minutes on medium until the mixture has reduced. Stir in a splash of oat milk and continue to cook on a low heat until reaching your desired texture. Serve hot and steamy on toasted bread.
