Pre heat the oven to 160°C
Cut the tomatoes in half and place cut side up on a lined baking tray. Drizzle with the oil, salt and sprinkle on the garlic. Place in the hot oven for about 30 minutes. You want them to slowly roast and not to catch too much. Keep checking them.
Spread you’re desired about of houmous onto a large serving plate.
Once the roasted tomatoes are ready, spoon them onto the houmous, sprinkle with the toasted pine nuts, basil leaves and drizzle with a little extra virgin olive oil. You can add little salt and pepper to taste.
