Tenders with Avocado & Corn Salsa by Gardein

Ingredients

  1. 2 cups cooked corn, fresh or frozen
  2. 1 – 2 avocados, cut into 1/2″ cubes
  3. 1 cup heirloom tomatoes, halved
  4. 1/2 cup red onion, finely diced
  5. 2 tbsp olive oil
  6. 1/2 tsp grated lemon zest
  7. 1 tbsp fresh lemon juice
  8. 1/4 cup chopped cilantro
  9. Salt and pepper to taste
  10. 1 packet of Gardein™ 7 Grain Crispy Tenders

Preparation

Combine all the ingredients for the corn salsa in a bowl. To blend the flavours, put in the refrigerator for about 25 minutes.

Meanwhile, preheat the oven to 220º C. Place crispy tenders on a parchment-lined baking sheet and bake in the oven for 20-25 minutes turning once until crispy and golden.

Serve salsa on top of the 7 grain crispy tenders.
