Delicious, smooth and creamy, the main ingredient is Aquafaba, a protein-rich liquid left over from cooking chickpeas. This is normally thrown away but we think it’s pretty magic so Rubies in the Rubble gave it a starring role in their recipe! Better still, vegans can enjoy it too!
By using Aquafaba in our mayo instead of eggs we save 85g of CO2e in every jar and use an ingredient that otherwise could have gone to waste. If you eat one jar of Aquafaba Mayo a month for a year you save the CO2 equivalent of powering a light bulb solidly for 3 days.
