It’s week two of our heated battle of the recipes: Wicked Healthy for Veganuary vs. Meat Free Monday. Which one do you fancy trying out?

These recipes are designed to help you begin your vegan journey and challenge your culinary skills. And, whilst you’re giving them a go, why not use your charm to challenge friends, family and colleagues to take that next step towards veganism?

First up is a fresh and flavoursome Whole Roasted Eggplant Parm-Eh-Ish

Fresh-caught eggplant straight from the garden! Our fresh catch of the day has been gutted, cleaned, crusted in kettle-baked chips and topped with our very own cauliflower buttah sauce then baked for a dish that will blow your mind and tastebuds!

It serves 2-4 people and is ready within 60-90 minutes!
