Two dishes sure to brighten up any winters day!
Week 8 of the Meat Free Monday Challenge is upon us and this week we have two healthy sides! These two colourful dishes can accompany a main meal, or be enjoyed on their own as a light lunch. This week choose from Italian Escarole Soup or Fennel Sauteed with Peppers!
These recipes come to you from Meat Free Monday‘s ‘Meat Free Monday Cookbook’, published by Kyle Books. Wicked Healthy (the brainchild of brothers Derek and Chad Sarno) offer Veganuary their culinary expertise to show you what you can expect this January.
Wicked Healthy bring you Italian Escarole Soup on behalf of Veganuary so you can try a true ‘Veganuary’ style dish. This Italian soup is typically served at events or holidays, so why not try it at Christmas? When the house is full at this time of the year this dish will make a lot of happy tummies! This recipe serves 8-10 and is ready in 45-60 minutes, recipe courtesy of Wicked Healthy for Veganuary.

This colourful dish is great as a side or on its own for a light lunch. This recipe serves 2 and is ready in 15-20 minutes. Recipe taken from The Meat Free Monday Cookbook. Foreword by Paul, Mary and Stella McCartney. Published by Kyle Books.
