Like everyone else, I'm not just one thing, and I'm certainly not "just" vegan: I'm also a coffee professional and a journalist, a teacher, a two-time marathoner and a daily runner, an avid reader (100+ books a year!), a prolific home cook, a music lover, a dog person, a registered voter, and an actively polite New Yorker.
Some people think veganism is a restrictive or limiting diet, but I’ve always found it to be an exciting, inspiring, and dynamic way to eat. Since transitioning from vegetarian to full vegan, I’ve discovered myriad new foods and flavors, and every trip to the market feels like an adventure, since I don’t feel stuck in a meat-and-potatoes rut.
Try vegan for January, but I’ll warn you—you just might like it so much you’ll never go back!
