Creamy, crunchy, sweet and delicious.
- Microwave sweet potatoes until soft. Allow to cool and peel, set aside.
- Add the remaining ingredients to a food processor and pulse until finely chopped. Mix together with the sweet potato and form into fritters.
- Lightly fry until golden brown and transfer to a baking tray. Put in the oven on 180 degrees Celsius for 15-20 minutes.
- Serve with a big dollop of hummus and vegetables.
