A zingy kick to any spread!
Makes 1 medium sized jar.
- Soak the tomatillos in a bowl of warm water for 10 minutes to remove the sticky layer from them.
- Finely dice the onion and place into a small bowl. Put the lime zest, juice and sugar into the bowl with the onions. This will soften them.
- Put the washed tomatillos into a food processer and pulse until roughly chopped.
- Roughly chop the coriander, then put all the ingredients into a bowl and mix.
