Vegan Waldorf Salad

This is such a simple salad – rich and creamy and perfect for summer salad days. It’s a big hit with children too. The combination of sweet apples and grapes with a nut dressing and crunchy celery, plus plenty of greens, makes this a hearty filling option.

Ingredients

  1. Salad:
  2. 1 large head of romaine lettuce
  3. Large handful of watercress or arugula
  4. Handful of seedless grapes, halved
  5. 1 apple, diced
  6. 2 sticks celery, chopped
  7. Handful of chopped walnuts
  8. 3/4 cup cherry tomatoes, halved
  9. Nut Dressing:
  10. 1/2 teaspoon Dijon mustard
  11. Juice of 1/2 lemon
  12. 1 Tbsp olive oil or flaxseed oil
  13. 3 Tbsp nutritional yeast flakes
  14. 1/4 cup water
  15. 4 Tbsp cashew nuts or 1 Tbsp nut butter
  16. 1/2 tsp garlic salt or sea salt
  17. Black pepper to taste

Preparation

Serves 6.

Method

  • Place all the ingredients for the dressing in a Nutribullet or blender with enough water to create a thick creamy dressing. This dressing can be kept in the fridge for 3-4 days.
  • In a large bowl, place all the ingredients and mix well. When ready to serve, drizzle over the dressing and toss to coat. The salad will keep in the fridge for a couple of days.
