Avocado on Toast vegan recipe

A simple classic.

  1. 1 large slice of bread
  2. 1 large ripe avocado
  3. Juice of 1 lemon
  4. Extra virgin olive oil
  5. Sprinkle of Japanese Nanami Togarashi or chili flakes
  6. Basil and tomatoes (to serve)

  • This is really quick; the first job is to toast your bread.
  • While that is going on squash the flesh of the avocado in a small bowl using a fork.  You don’t want this to be too smooth, a bit of texture is more satisfying.
  • Mix the lemon juice into the avocado to stop it from going brown.
  • As soon as the toast is ready give it a quick drizzle of olive oil and then spread over the avocado.
  • Lastly, sprinkle with the Nanami Togarashi or chili flakes, and serve with fresh tomatoes and basil.
