Buckwheat pancakes

A weekend brunch classic!

  1. For the pancakes:
  2. 1 cup of buckwheat flour
  3. 1 cup of unsweetened almond milk
  4. 1/3 cup of mashed banana
  5. 1 tsp of cinnamon
  6. 1 tsp of vanilla extract
  7. For the chocolate sauce:
  8. 1/2 cup unsweetened almond milk
  9. handful pitted dates
  10. 1 tbsp raw cocoa
  11. 1/2 tsp maca powder (optional)

*Makes around 6 pancakes

Mix all the pancake ingredients together well.

Take approx. 1/4 cup of the mixture to make 1 pancake and fry gently until you see small bubbles forming on the pancake then turn around.

To make the chocolate sauce:

Blend milk and dates in blender, then transfer to a pot and simmer for 5 minutes. Add cocoa, let bubble for another 2 mins and your chocolate sauce is ready.

Serve the pancakes piled high with fruits and your favourite toppings. Pour over the chocolate sauce.
