Method

  1. Preheat the oven to 350°F (175°C).
  2. Mix the soy milk with the apple cider vinegar to create buttermilk. Let it sit for about 10 minutes.
  3. Meanwhile, in a bowl, combine the mashed bananas, sugar, vanilla extract, water and olive oil until well mixed. Once the buttermilk is ready, add it to the mixture and stir well.
  4. In another bowl, whisk together the dry ingredients: flour, baking soda, and salt. Add the wet mixture to the dry ingredients and combine until smooth. Then add the chocolate chips and mix until well combine.
  5. Line a rectangular cake pan (about 9 x 5 inches) or any pan you have on hand with parchment paper.
  6. Pour the batter into the prepared pan, spreading it evenly. Bake for 55 minutes to 1 hour, or until a toothpick inserted into the center comes out clean.
  7. Let the bread cool completely before serving. Garnish with fresh fruits on top if desired.
