Ingredients

  • 1 medium/large head of cauliflower—washed and cut
  • 4 cups water
  • 2 Edward & Sons Curry Bouillon Cubes
  • 1 clove garlic
  • ½ cup Native Forest Organic Coconut milk (any variety will work)
  • chopped parsley, cilantro, greens (optional)

This Easy Creamy Curried Coconut Cauliflower Soup is made with just 4 ingredients for an insanely delicious and nourishing winter soup.

Method

  1. Add the bouillon cubes, garlic, and cauliflower into a saucepan with boiling water.
  2. Bring back to a boil and then turn down to simmer. Simmer for 10–15 minutes until cauliflower is tender and mashable.
  3. Blend the contents and put back in the pan over low heat.
  4. Pour in the coconut milk and optional ingredients and let simmer for 5–10 minutes.
  5. If the soup is too thick, add more water or coconut milk (depending on whether you would like it thinner or thinner but creamier)
  6. Serve and enjoy!
