Easy Peasy Vegan Muesli

Save money by making your own simple and nutritious muesli that will last you all week!

  1. 150g porridge oats
  2. 25g crushed bran flakes
  3. 75g rye flakes
  4. 50g crushed hazelnuts
  5. 50g flaked almonds
  6. 50g raisins
  7. 50g chopped apricots
  8. 2 tbsp of pumpkin seeds
  9. 2 tbsp of flax seed
  10. Topping
  11. Fresh fruit
  12. Hemp seeds
  13. Desiccated coconut

Preheat oven to 160°C

Mix together the oats, bran flakes, rye flakes and nuts

Spread the mixture on to a large baking tray and toast the mixture in the oven for 10 minutes, shaking the tray halfway through

Take out the oven and leave to cool (around 10 minutes)

Mix in your raisins, apricots and seeds

Serve with a plant milk of your choice, and top with berries, banana, coconut flakes – or anything that takes your fancy!

Keep in an airtight container.
