Blueberry Cake

This is the easiest ever vegan blueberry cake! But don’t let that fool you – it’s also amazing!

Cooking Time: 35 minutes
Serves: 6

  • Dry ingredients:
  • 1 1/2 cups all-purpose flour
  • 1/2 cup brown sugar
  • 2 tsp baking powder
  • Wet ingredients:
  • 2/3 cup dairy-free milk
  • 1/3 cup sunflower oil
  • 2 tsp vanilla essence
  • 1 tbsp apple cider vinegar
  • Other ingredients:
  • 1 1/3 cups blueberries
  • Vegan butter to grease the baking tin
  • Wax paper
  • A sprinkle of powdered sugar

  1. Preheat your oven to 360F.
  2. Mix together all dry ingredients in a large bowl. Make sure that there are no lumps.
  3. Mix together all wet ingredients in a separate bowl.
  4. Combine the dry and wet ingredients and mix well until you get a smooth batter (with no lumps).
  5. Then carefully fold in the blueberries.
  6. Line a baking tin with baking paper and grease the sides with vegan butter.
  7. Pour the batter into the baking tin and even it out with a spatula.
  8. Bake for 35 min.
  9. Take out of the oven and let cool down thoroughly. Then sprinkle powdered sugar on top.
