Mashed Sweet Potatoes and Ginger

For those cold winter nights, comfort yourself with this rich spicy dish.

  1. 3.75 cups sweet potato
  2. 5 tbsp fresh root ginger (or 8 tbsp if you want it fiery)
  3. Olive Oil
  4. Salt and Pepper

Serves 2.

  • Wash the sweet potatoes and bake them in the oven until soft.
  • Grate the ginger and gently fry in some olive oil.
  • Once the potatoes have cooked, peel and put the flesh into a mixing bowl.
  • Using a mixer, either free-standing or hand-held, beat the sweet potato along with the ginger, salt, and pepper until you have a smooth consistency.
