Set a large pan of water on high heat, and bring to the boil while you prepare the ingredients.
Add the rice to the pan, and halfway through it’s cooking time, set a large frying pan on medium heat with a glut of oil.
When the oil is hot, add the mushrooms and cook until softened (about 1 minute), then add the onion and spices and turn the heat to low. Stir to make sure the spices don’t burn.
Drain the rice and add it to the mushroom pan. Stir until the rice has taken on a yellow colour, stir in the coriander and serve.
