This simple recipe is full of complex flavours, and makes the perfect light lunch.

  1. 3 cups cooked brown rice
  2. 1 cucumber
  3. 2 carrots
  4. 1/4 cup sesame seeds
  5. 1 nori sheets, roughly chopped
  6. 1 avocado, sliced into pieces
  7. ½ cup of coriander, finely diced
  8. Spring onions to garnish
  9. Dressing for rice:
  10. 2 tbsp sesame seed oil
  11. 2 tbsp tamari
  12. 1 tbsp ginger juice*
  13. 1 tsp rice vinegar
  14. 1 tsp maple syrup

Serves 2.

*To get the juice from ginger grate a piece of ginger and squeeze the gratings to release the juice.

  • In a mixing bowl place cooked brown rice, sesame oil, tamari, ginger, rice vinegar and maple syrup and mix well until the rice is evenly coated.
  • Add sesame seeds and coriander.
  • Prepare your vegetables. We like to finely dice everything and combine it together to resemble ‘unfried rice’. You can also cut your vegetables into matchsticks.
  • In serving bowls combine rice, vegetables and nori however you like. Garnish with spring onions and serve.
