1 packet of rice noodles
Soy sauce
Coconut aminos
1 red pepper
1 green pepper
1 yellow pepper
1 onion
1 handful of your favorite olives
1 or 2 tomatoes, depending on size
1 handful of basil fresh
3/4 cup of your favorite mushrooms
1 1/4 cups grated vegan parmesan cheese

Boil a pot of water. Add rice noodles and boil for 5 minutes. Drain and rinse with cold water.
Put the noodles in a frying pan with soy sauce and coconut aminos (sweetened). Stir so it doesn’t burn, but leave it to brown. Now let’s go to the sauce…
Cut green, yellow, and red peppers and onions in very small cubes. Finely chop the tomatoes and olives. Slice the mushrooms. Cook all of the veggies in a pot with a bit of coconut aminos. Here, you can add some tomato sauce if you like.
Once veggies are cooked, add the basil.
Put a pile of rice noodles on a plate, top with the cooked veggie sauce, and garnish with a handful for vegan parmesan!
