Ingredients

  • 1/2 package of Current Foods plant-based tuna filet, diced into ½ inch cubes OR pre-cut cubes
  • 1 cup of cooked short-grain white rice
  • ½ cup of shredded carrots
  • ½ cup of sliced avocado
  • ½ cup of sliced cucumber
  • 3 tablespoons of toasted sesame oil
  • 1 tablespoon of ponzu sauce
  • 1 teaspoon black sesame seeds (optional)
  • 1-2 sheets of dried seaweed (optional)

Preparation

Special equipment: Veggie peeler, bowl, measuring cups

Method

  1. Start your rice. Meanwhile, in a small bowl, whisk together sesame oil and ponzu. Add plant-based tuna and toss to ensure all cubes have an even coating of marinade.
  2. Prepare toppings: Slice avocado and cucumber. Peel and shred carrots.
  3. To serve, add rice to the bottom of a large bowl. Top with plant-based Current tuna and toppings of your choice. Garnish with sesame seeds before serving.

TIP! If desired, create more marinade using 3 parts toasted sesame oil, and 1 part ponzu. Add a dash of soy sauce if you like it a bit more savory.
