Ingredients

  • 12 Medjool Dates, pitted
  • 2 tablespoons creamy peanut butter
  • 2 tablespoons strawberry jam
  • 2 SimplyProtein Peanut Butter Chocolate Snack Bars
  • 1 cup dark chocolate chips
  • 1 teaspoon coconut oil
  • ½ cup freeze-dried strawberries

A healthy, satisfying indulgence, this simple recipe combines the flavors and textures of creamy peanut butter, sweet dates, strawberries, and rich dark chocolate with SimplyProtein’s crispy, delicious plant-based, gluten-free, kosher, vegan and B Corp Certified snacking bars.

Method

  1. Place a piece of parchment or wax paper on a cutting board or baking sheet. Open dates, remove pits, and place them on parchment so they are all slightly overlapping.
  2. Press down the dates with a cup to stick them more together and flatten them to be about ¼ inch thick.
  3. Mix together peanut butter and jam, then spread that mixture evenly on top of the dates.
  4. Crumble SimplyProtein Snack Bars evenly on top of the PB&J.
  5. Melt chocolate and coconut oil, stirring consistently until smooth. Pour melted chocolate over the crumbled SimplyProtein and spread it out so it covers everything.
  6. While chocolate is still melty, sprinkle freeze-dried strawberries on top, then refrigerate until the chocolate hardens.
  7. Chop the bark into 10-12 pieces and store in the fridge until you’re ready to enjoy!
