Sweet Potato & Watercress Soup


  1. 1 onion
  2. 2 cloves garlic, crushed
  3. 1 Tbsp olive oil
  4. 2 celery stalks, finely sliced
  5. 4 cups vegetable stock
  6. 2 sweet potatoes, peeled and cut into cubes
  7. 1 bunch watercress
  8. 2 heaped Tbsp sweet white miso

  • Roughly chop the onion, crush the garlic and add to a large saucepan with the olive oil.
  • Saute for 5 minutes.
  • Add the celery and stock, stir to mix and then add the sweet potatoes.
  • Cover and cook for 15 minutes.
  • Transfer to a blender and add the watercress.
  • Return to the pan and stir in the miso.
  • Serve garnished with a sprig or two of watercress.
