1 piece fried tofu
.5 oz. shredded carrot
.5 oz. sliced avocado
.5 oz. sliced cucumber
1 tbsp peanut sauce
.15 oz. toasted chopped cashews
0.5 oz. Thai salad mix (Thai basil, cilantro, mint, red onion)

Spread the rice out into a thin sheet on your sushi mat, then top with fried tofu, carrots, cucumber, avocado and roll!
Garnish with peanut sauce, cashews, and Thai salad.
Notes: Coat 2.5 oz of tofu in flour only and fry until crispy on the outside, top with fresh salad.
