A bowl of Chilli sin carne

You’ll love this bowl of gently spiced chili which is perfect with a little vegan sour cream.

  1. • 1 onion
  2. • 1 green pepper
  3. • 1 cloves of garlic
  4. • 1 chili pepper
  5. • 28 oz. can fire-roasted diced tomatoes
  6. • 2 cans of kidney beans
  7. • 1 can of pinto beans
  8. • 1 tbsp of tomato paste
  9. • 1 tl smoked paprika powder (spicy)
  10. • 2 tbsp of oregano
  11. • pepper and salt
  12. • olive oil
  13. • 1-inch square of vegan chocolate
  14. • 3/4 cup vegan sour cream
  15. • Finely chopped red onion
  16. • Fresh cilantro
  17. • Tortillas

Serves 4.

  • Heat a tbsp of olive oil in a thick bottom cooking pot.
  • Finely chop the onion, garlic, chili and pepper and sautee in the olive oil.
  • Add the drained tomatoes and tomato paste after 5 mins.
  • Season with oregano, paprika powder, pepper and salt.
  • Let it simmer for 20 mins. over a low heat.
  • Garnish with vegan sour cream, chopped red onion, cilantro, and serve with the tortillas.
