The perfect appetizer or main dish that delivers loads of freshness and flavor using hearts of palm as the star ingredient!

Method

  1. Preheat oven to 400° F. Prepare a baking sheet with parchment paper.
  2. Slice the hearts of palm lengthwise and then cut into chunks of about 3/4-inch. Gently press and break apart the pieces into shreds. Put into a bowl.
  3. In another bowl, whisk together mayonnaise, Old Bay seasoning, salt, and pepper until well blended. Stir in hearts of palm and green onions until well combined
  4. Form into six to eight patties.
  5. Sprinkle the Panko onto a plate or shallow dish. Put the patties on the panko, pressing gently so the panko adheres. Do the same on the other side. Place patties on prepared baking sheet, spacing them evenly. Spray with cooking spray. Clean the tray of any loose Panko.
  6. Bake for 17-22 minutes until light golden brown on both sides.
  7. Turn on broiler to HIGH and broil for 30 to 90 seconds until deep golden brown. Keep an eye on them as they can burn quickly.
  8. Serve immediately with these suggested accompaniments if desired: chopped fresh parsley or lemon wedges
