Ingredients

1 pound (16 shrimp) Mind Blown Crispy Crunchy Fried Shrimp
1 cup fresh spinach
1 cup of rice, prepared
1 cup of purple cabbage, thinly sliced
1/2 cup carrots, grated
Garnish: cilantro, green onion (or herbs of choice)
Cooking oil of choice

For the dressing:
1/2 cup vegan mayo of choice
2 Tbsp olive oil
1/2 cup parsley, fresh
1/2 cup dill, fresh
4 large cloves garlic
4 Tbsp lemon juice
1 tsp maple syrup
Salt and pepper, to taste
Water, to thin as necessary

Method

Prepare the Mind Blown Crispy Crunchy Fried Shrimp. To cook from frozen: In a large skillet heat high-heat oil. Once heated, cook Mind Blown Crispy Crunchy Fried Shrimp 2-3 minutes each side; set aside. Remove from skillet and reserve on a plate. Or use air fryer: Spray the air fryer basket with cooking oil. Add Mind Blown Crispy Crunchy Fried Shrimp. Turn air fryer on at 370 degrees for 8-10 minutes.

Prepare the dressing. In a mixing bowl with together the dressing ingredients. You can also place in a high-speed blender to combine. Adding water to this as you see fit. Reserving a portion to mix in the slaw.

Prepare the purple cabbage and carrot slaw by adding a few spoonfuls of prepared dressing. Toss and set aside.

Assemble your bowls. Add prepared rice, spinach, prepared slaw and top with the prepared Mind Blown Crispy Crunchy Fried Shrimp. Garnish with herbs and e with prepared dressing. Enjoy!
