Ingredients

  1. 2 1/2 cups all-purpose flour
  2. 1 tbsp baking powder
  3. 2 tsp baking soda
  4. 1 pinch of salt
  5. 7 oz. plant-based yogurt, unsweetened
  6. 6 tbsp stevia or 3/4 cups sugar
  7. 6 3/4 oz. (200 ml) soy milk, unsweetened
  8. 6 tbsp oil
  9. 1 tbsp vanilla extract
  10. 1 cup of blueberries

Preparation

Preheat the oven to 200°C. Very Berry Muffins are made using Provamel Organic Soya Drink Unsweetened. If you're in a country where Provamel isn't available, substitute with your favorite dairy-free alternatives!

Method

  • Preheat the oven to 390°F.
  • Mix all the dry ingredients.
  • Beat the wet ingredients and mix with the dry ones until you have a lumpy mass.
  • Add the blueberries.
  • Ladle in the muffin tins (+/- 10 pieces) and bake for 25 minutes.
