Waldorf Salad

Vegan Waldorf Salad
Prep Time: 4M
Serves: 6

This is such a simple salad – rich and creamy and perfect for summer salad days. I also find this is a big hit with children too. The combination of sweet apples and grapes with a nut dressing and crunchy celery plus plenty of greens makes this a hearty filling option.

Method

  • Place all the ingredients for the dressing in a nutri bullet or blender with enough water to create a thick creamy dressing. This can be kept in the fridge for 3-4 days.
  • In a large bowl place all the ingredients and mix well. When ready to serve drizzle over the dressing and toss to coat. The salad will keep in the fridge for a couple of days.
