Pecan or Almond Nuggets

  1. 4 cups almonds or pecans, or 2 cups of each (pulverized using a food processer)
  2. ½ cup rice malt syrup
  3. ½ cup barley malt syrup
  4. 1 tsp. vanilla
  5. Desiccated coconut
  6. Grain based sweetened chocolate chips (optional)



Place pulverized nuts in a large mixing bowl.   In a small bowl stir together the syrups and vanilla.  Mix the wet ingredients into the bowl until the nuts and syrups are evenly distributed and are sticking together.

Place some water in a bowl and moisten hands with water to keep the mixture from sticking. Pinch off a piece of mixture and shape into small balls.  Roll in the desiccated coconut. Keep chilled.

Note: if coating in chocolate chips, simply pop the chips in a metallic bowl atop a pot of simmering water to melt to a liquid.  Using two teaspoons roll the nuggets in the melted chocolate chips and leave to set on parchment paper. Chill and enjoy.
