This is a fresh and fruity salad that tastes much more elegant than it sounds. It’s perfect for barbecues or as a side dish with a hearty one-pot dish. I love it with a couple of slices of a rustic baguette as a simple dinner on hot summer evenings.

Ingredients

  1. 3 apples (not too sweet)
  2. 1 bunch spring onions (6-7)
  3. 3/4 cup soya yoghurt (full fat)
  4. 1 teaspoon lemon juice
  5. 1/2 tablespoon agave syrup (less if the yoghurt is sweetened)
  6. Salt, pepper
  7. ½ cup roasted and salted peanuts

Method

Wash the apples, remove the core and cut them lengthwise in fine slices.

Drizzle with a little lemon juice and mix in a bowl.

Top and tail the spring onions, wash them and cut into very fine slices.

Mix apples and onions in a salad bowl.

Mix yoghurt with agave syrup, salt and pepper, pour over the apple and onion mix and mix well.

Sprinkle with peanuts before serving.
