Ingredients

1 cooked beetroot
4 cherry tomatoes
½ yellow pepper
Handful of pistachios
Mixed salad leaves
Juice of half a lemon
Drizzle of sesame oil

Not only tasty but pretty too!

Method

Slice beetroot and pepper, toss with tomatoes and salad leaves.
Squeeze over half a lemon and a good drizzle of sesame oil and sprinkle with pistachios.
