Cauliflower Red Onion Sweet Potato Kale Chilli Sesame Seed and Sweetcorn Fritters with Vegetables and Hummus

Creamy, crunchy, sweet and delicious.

  1. ½ head cauliflower
  2. 1 red onion
  3. 3 sweet potatoes
  4. 2 chilli
  5. 1 tsp sesame seeds
  6. 60 gr sweetcorn
  7. Handful of kale

Serves 6

  • Microwave sweet potatoes until soft. Allow to cool and peel, set aside.
  • Add the remaining ingredients to a food processor and pulse until finely chopped. Mix together with the sweet potato and form into fritters.
  • Lightly fry until golden brown and transfer to a baking tray. Put in the oven on 180 degrees Celsius for 15-20 minutes.
  • Serve with a big dollop of hummus and vegetables.
